Inverted sugar is a liquid syrup of glucose (and fructose) obtained by inverting sucrose, with moisturizing, anti-crystallizing and sweetening properties, as well as high fermentative power.
Features and applications:
Preserves the most tender pastry preparations. Maintains moisture in ganaches and truffles, and also acts as an antifreeze for ice cream.
Add directly to the recipe.
