LACTOSE – LACTOSE POWDER
Lactose powder, stabilizing powder. It is a disaccharide sugar composed of linked glucose and galactose, usually obtained from milk, as it is present in the milk of most mammals.
It has a mild flavor and low sweetness, so it is often used as a sugar substitute to reduce the sweetness of a recipe without altering the solids content. It is less soluble than regular sugar.
It has virtually no fermentative power, and is also used to sweeten fermented beverages. It also has anti-humidity properties.
