TREHALOSE – TREHALOSE POWDER
Trehalose powder is a disaccharide carbohydrate consisting of two linked glucose molecules, obtained through the processing of starch.
Features and applications:

Sweetening power approximately half that of sugar.

Useful for protecting membranes and proteins during drying or freezing processes.

It has a high water absorption capacity, so it is used to maintain the sponginess of doughs for cakes, biscuits and other preparations, as well as for specialties with low water content, preserving the crispy texture of biscuits, crackers and tea biscuits.

Useful as a protective barrier against moisture, for example, in yogurts with biscuits inside.

It is used to protect structures, for example, proteins in surimi.
Usual dose: Depends on preparation.
Available in 700g and 175g packs.
