DESCRIPTION
PROTEASE SOFT – PROTEASE ENZYME POWDER
A concentrated enzymatic complex produced by direct extraction from the stems of ripe pineapple. It degrades protein chains, both animal and vegetable, by cutting them at different sites, allowing for faster protein solubilization. This breaks down the protein structure and consequently softens the product. It also prevents cloudiness in solutions of products containing a high protein load.
Applications:
Ideal for tenderizing meats, fish, legumes and other protein-rich products.
Instructions for use:
Cover, inject, or immerse the product in the Proteäse SOFT solution. Package and store between 40 and 60 ºC. It is essential to cook the product at temperatures above 70 ºC after marinating with the enzymes.
