DESCRIPTION
UMAMI PROTEASE – PROTEASE ENZYME POWDER
A concentrated enzymatic complex produced by a selected strain of Aspergillus Oryzae. It degrades protein chains by cutting the ends of the branches, achieving complete degradation of the peptide chain and obtaining its elementary molecules, amino acids. These amino acids generate the umami flavor, highly sought after in some preparations.
Applications:
It improves fermentation, adds umami flavor, and therefore enhances the taste of preparations.
Instructions for use:
Cover, inject, or immerse the product in the UMAMI Protease solution. Package and store between 40 and 60 ºC. It is essential to cook the product at temperatures above 70 ºC after marinating with the enzymes.
