DESCRIPTION
MALTO AQUO – DEHYDRATED GLUCOSE SYRUP
Dehydrated glucose syrup is a mixture of carbohydrates obtained from the breakdown of waxy corn starch.
It has load-carrying properties, which means that when applied to aqueous products, including acidic products like vinegar or alcoholic ones, it turns them into powder.
It also works with fats (oils), but in that case it is less efficient than Maltodextrin Tapioca.
It is recommended to use liquids with a certain concentration to maintain an intense flavor in the final preparation.
Mix the product with water-based products and grind for a few minutes to break up any lumps.
Instructions for use:
When mixed with water-based products, including acidic products like vinegar, absorption occurs, resulting in a powdery texture.
Usual dosage:
150-200 g per 100 g of liquid product (to be converted into powder).
