DESCRIPTION
PËCTIN LM LACTIC – PECTIN LM POWDER
LM pectin powder is especially indicated for products containing calcium, particularly dairy products.
Allows the production of reversible coatings with low sugar content, with an elastic, gel-like texture, ideal for coating pastries, cakes, cookies and other preparations.
Fiber-type carbohydrate, extracted from citrus fruits or apples, containing salts that optimize gelation.
CHARACTERISTICS AND APPLICATIONS:
It is reversible, and can melt and gel depending on the temperature.
It can be used in indoor confectionery products, in acidic and/or neutral-alkaline environments.
Products coated with this pectin (cakes, cookies, etc.) can be refrigerated and frozen without problems.
USUAL DOSAGE:
10–20 g/kg of fruit.
FORMAT:
Available in 600g and 150g packs.
