Pectin LM Low Calorie – Pectin Powder
Used for the production of low-calorie, organic jams, jellies, and marmalades.
Fiber-based carbohydrate, extracted from citrus fruits or apples.
Gluten-free product, suitable for people with celiac disease.
CHARACTERISTICS AND APPLICATIONS:
Instructions for use: Mix with sucrose or other carbohydrates and add to the liquid.
Gelation conditions: Allows gelation with lower sugar content (above 24 degrees Brix) and low acidity (pH greater than 4). Improves gelation in the presence of calcium.
Thermoreversible gel.
It can be used to obtain products certified as organic and ecological.
USUAL DOSAGE:
10–20 g/kg of fruit.
