DESCRIPTION
PËCTIN LM NAPPAGE – AMIDATED PECTIN LM POWDER
For the production of dips, creams and toppings.
Fiber-type carbohydrate, extracted from citrus fruits or apples, combined with dextrose for better dispersion, salts for slow gelation, and calcium to optimize the process.
Gluten-free product, suitable for people with celiac disease.
CHARACTERISTICS AND APPLICATIONS:
Instructions for use: Mix with sucrose or other carbohydrates and add to the liquid.
Gelation conditions: Gels at 25 degrees Brix, and increasing this value is recommended for better results. Optimal conditions are between pH 3.5 and 3.7.
It is thermoreversible and withstands freezing and thawing processes well.
USUAL DOSAGE:
10–20 g/kg of fruit.
FORMAT:
Available in 600g and 150g packs.
