DESCRIPTION
AGÄR BIO – ORGANIC AGAR POWDER
Organic agar powder that allows the production of hot gelled products, with excellent results even in small quantities.
Fiber-type carbohydrate extracted from organic red algae, such as Gelidium and Gracilaria.
Extremely efficient. A 400g pack is enough for about 500 servings of meat or 100g of vegetables.
It is an excellent source of fiber, with positive effects on cholesterol levels, 0% fat, and can be used as a gelling agent in vegetarian and vegan diets.
Gluten-free product, suitable for people with celiac disease.
CHARACTERISTICS AND APPLICATIONS:
It is presented as a finely ground powder.
Mix it cold and then bring it to a boil.
Fast gelling, withstanding temperatures up to 80ºC after gelling (product gelled when hot).
In acidic and alcoholic environments, it loses some of its gelling power, therefore the dosage should be increased to obtain suitable textures.
USUAL DOSAGE:

For soft gelled products: 2–5 g/l.

For firm gelled products: 5–10 g/l.
