DESCRIPTION
AGÄR ELASTIC – AGAR AND GELLAN POWDER
For the production of hard, elastic, and highly versatile gelled products.
It is a combination of agar and gellan, both fiber-type carbohydrates.
This combination gives Agär Elastic gelling properties similar to conventional agar, but with a key difference: the presence of gellan provides elastic properties, facilitating handling and allowing for more flexible gelling.
Ideal for hard and elastic gels that allow for heating and versatility.
Extremely efficient. A 400g package is enough for approximately 500 to 800 servings of meat or 100g of vegetables.
CHARACTERISTICS AND APPLICATIONS:
It is presented as a finely ground powder.
Mix cold with vigorous stirring and bring to a boil.
Fast gelling, withstanding temperatures up to 80ºC (product gelled when hot).
High resistance to high temperatures.
USUAL DOSAGE:
6–10 g/kg.
FORMAT:
Available in 400g and 100g packs.
