Emulsifier, foaming agent and protein stabilizer.
It allows you to obtain stable, foamy textures, whether whipped or made with a siphon, such as mousses, meringues, sponge cakes, and other preparations.
It is a protein with a small percentage of carbohydrates, obtained from 100% fresh chicken egg whites, pasteurized and spray dried.
Gluten-free product, suitable for people with celiac disease.
