DESCRIPTION
ALGÏNATE – SODIUM ALGINATE POWDER
Sodium alginate powder, whose main function is as a gelling agent (in the presence of calcium), but which also has thickening and stabilizing properties.
Algorithmic, a hydrocolloid polysaccharide obtained from brown algae (Macrocrystis, Fucus, Laminaria, among others), found in cold waters.
It does not disperse well in acidic media. The gel produced in the presence of calcium is heat-resistant, remaining stable even with increasing temperature.
CHARACTERISTICS AND APPLICATIONS:
Mix cold while stirring vigorously and let stand.
It gels in the presence of calcium, which makes it especially useful for spherification, producing thermosetting gels.
USUAL DOSAGES:

Basic spherification: 5–10 g/l of feed; calcium chloride bath: 5–10 g/l of water.

Reverse spherification: 20 g Glücocal/l of food; alginate bath: 4–6 g/l of water.

As a thickener/stabilizer: 10–15 g/l of food.
