Bicärb is sodium bicarbonate, a sodium salt widely used as a leavening agent in baking and cooking. It is mainly used to make doughs rise, whether in baked or fried products, and also to impart a characteristic flavor. It is a solid crystalline compound, highly soluble in water, that reacts with acids releasing gas.
