CARÖBIN – LOCUST BEAN GUM POWDER
Carob, or locust bean gum, is a natural fiber-type polysaccharide, classified as a galactomannan vegetable gum , used as a thickening, stabilizing, and emulsifying agent .
It is obtained from carob seeds and acts as a hydrocolloid, being widely used in sauces, creams and ice creams.
Caröbin's viscosity remains stable in contact with acids and salts , making it particularly versatile in different food matrices.
It is a gluten-free product, suitable for people with celiac disease.

Excellent performance as a thickener in sauces and creams.

In combination with XANTHÄN or XANTHÄN INSTANT , it forms very elastic gels.

HOW TO USE:
Mix cold with vigorous stirring, bring to a boil and let cool for the thickener to fully activate.
USUAL DOSAGE:

For thickening: 5–10 g/L

For gelation (in combination):

2.5–5 g/L Caröbin + 2.5–5 g/L Xanthän

Product intended for food use.
Store in a cool, dry place.
