DESCRIPTION
TÖUFOOD EMÜPASTE
A blend of water-based emulsifiers that creates highly stable emulsions. It is applied directly cold to preparations containing both a water component and a fat component, such as vinaigrettes, mayonnaise, béarnaise sauce, or high-fat pasta dishes.
HOW TO USE:
Pour directly into the preparation and emulsify with vigorous stirring.
A dosage of 5–10 g/kg is recommended for creams and 25–30 g/kg for whipped doughs.
