DESCRIPTION
GELLAN – GELLAN GUM POWDER
Gellan gum powder, ideal for producing solid, elastic gels with a clean cut. Also suitable for preparing meat and vegetables using the "Cook-and-Chill" method.
It is a fiber-type carbohydrate obtained through bacterial fermentation with Sphingomonas elodea .
Ideal for preparing hot gels, due to its high thermal resistance (up to 90ºC).
Extremely efficient. One 350g container is enough to produce approximately 1,500 to 1,750 100g portions of meat or vegetables.
CHARACTERISTICS AND APPLICATIONS:
It is presented as a finely ground powder.
Mix cold with vigorous stirring and bring to a boil.
Fast gelling, withstanding temperatures up to 90ºC (product gelled when hot).
It loses some of its gelling power in very saline solutions.
It enhances the effect in products containing calcium, such as yogurts and other dairy products.
USUAL DOSAGE:
6–10 g/l.

Available in 350g and 85g packs.
