INULIN WAXY – INULIN POWDER

High-yield inulin used as a thickener and fat substitute.

Carbohydrate extracted from chicory.
In this high-performance version, the smaller molecules have been eliminated, suppressing the slight sweetness characteristic of standard inulin.

CHARACTERISTICS AND APPLICATIONS:

  • Allows you to obtain viscous preparations with a waxy and manageable texture.

  • Suitable for hot and cold applications.

  • It acts as a fat substitute in lipid-reduced formulations.

  • Used in ice cream to increase creaminess and reduce fat content.

  • It promotes water retention and improves the final texture.

  • Suitable for vegetarian and vegan diets.

HOW TO USE:

Mix cold with vigorous stirring for about 3 minutes.
No heating is needed.
Pass through a sieve to remove any possible lumps.
Thickening occurs immediately at room temperature; for greater viscosity, let stand for 2 to 4 hours.

USUAL DOSAGE:

  • Low viscosity preparations: 50–100 g/L

  • Waxy texture preparations: 250–500 g/L
