DESCRIPTION
KÄPPA – KAPPA CARRAGEAN POWDER
Kappa carrageenan powder, a fiber-type carbohydrate, whose rapid gelling and firm, adaptable consistency allow for the application of "napados"—that is, gelled coatings on other products.
It is a type of carrageenan extracted from various varieties of red algae, especially Chondrus crispus and Gigartina.
After gelling, it can withstand temperatures up to 70–80 ºC.
Extremely efficient. One 400g pack is enough for approximately 700 100g servings of vegetables.
CHARACTERISTICS AND APPLICATIONS:
It is presented as a finely ground powder.
Mix cold with vigorous stirring and bring to a boil.
Very rapid gelation. It loses some of its gelling power in acidic environments.
USUAL DOSAGE:
5–10 g/l.
FORMAT:
Available in 400g and 95g packs.
