DESCRIPTION
KÖNJAC – KONJAC GUM POWDER
Konjac gum is a natural fiber-type polysaccharide obtained from the tubers of different species of the Amorphophallus plant, cultivated mainly in Asia.
It acts as a thickener and gelling agent , forming thermally stable gels and exhibiting a high water retention capacity. For this reason, it is highly resistant to freeze-thaw cycles.
The gel's strength increases with the application of heat and in alkaline environments.
It is widely used in baking, meat products, pasta , and as a vegetable substitute for animal gelatin .
It exhibits strong synergies with other hydrocolloids:

With carrageenans , it forms elastic, thermoreversible gels.

With xanthan gum , it creates gels resistant to high pressure, recovering their original shape.

With starches , it increases viscosity, keeping it stable during cooking and cooling.
CHARACTERISTICS AND APPLICATIONS:

It comes in fine powder form.

It should be dispersed beforehand with other ingredients or added directly to water with vigorous stirring until a homogeneous solution without lumps is obtained.

It acts as a highly efficient thickener and gelling agent.
INGREDIENTS:
Thickening agent: konjac flour (E-425)
May contain milk.
HOW TO USE:
Mix into the cooled product while stirring vigorously.
DOSAGE:
0.5 – 5 g/kg of product.
Product intended for food use.
Store in a cool, dry place.
