DESCRIPTION
LËCITIN – SOY LECITHIN POWDER
Soy lecithin powder for the production of foamed products called "ares".
It is a phospholipid generally extracted from soybeans that has an emulsifying function, but is used in cooking for its foaming properties.
It's ideal for turning broths and juices into foams, but also oils into fatty foams.
It is extremely efficient.
A 300g packet is sufficient for approximately 1000 doses of "air". Only 6g of Lëcitin is needed for each kilogram of liquid to obtain a stable foam.
CHARACTERISTICS AND APPLICATIONS:
It is presented as a finely ground powder.
Mix cold with vigorous stirring and froth with a crushing arm placed between the liquid and the outside air.
The best results with "air" type foam are obtained at temperatures between 30 and 40°C.
If an "air" type oil foam is desired, it cannot be obtained cold; it must be heated to 40–50°C to obtain stable "air" foams.
Foams made with lecithin can be frozen.
Typical doses for obtaining foam: 3–8 g/l.
