DESCRIPTION
MËTICEL – METHYLCELLULOSE POWDER
Mëticel is a fiber-type carbohydrate derived from plant cellulose, with thickening and gelling properties. Unlike other gelling agents, Mëticel gels when the temperature rises and, upon cooling, loses its gelling properties, becoming liquid again. This feature is ideal for fine, chopped purees that melt easily in the mouth.
APPLICATIONS:
An interesting application of Mëticel is in batters for frying, such as croquettes, as it helps retain water and prevents them from breaking during frying.
HOW TO USE:
It is recommended to mix the cold or lukewarm Mëticel with vigorous stirring. Then, let it rest in the refrigerator until it reaches about 40ºC for hydration. After that, heat can be applied, and the gelling agent will begin to gel from 55ºC.
USUAL DOSAGE:
Between 2 and 15 g/kg, depending on the specific application.
