OLIGÖFRUCTOSE – OLIGOFRUCTOSE POWDER
Oligofructose powder. Fiber-type carbohydrate extracted from chicory roots, tubers, and rhizomes. This product is obtained from the partial enzymatic hydrolysis of chicory inulin.

Oligofructose consists of a chain of fructose molecules linked to a glucose molecule at one end, with a degree of polymerization (DP) between 2 and 8. This configuration gives it excellent stabilizing properties, allowing it to stabilize mousses, creams, syrups, ice creams, and other preparations, as well as providing a slight sweetness.

In general, it can be used as a substitute for sucrose or sugar.
