It is a potato protein concentrate with emulsifying, foaming, and thickening properties. It serves as an egg substitute in traditional recipes where eggs are used as emulsifiers and foaming agents, such as in meringues or whipped batters. Suitable for whipping meringues and cold preparations. Effervescent powder.
INGREDIENTS:
Potato protein. May contain milk.
USE:
Mix cold with the base liquid, stirring vigorously. Let it rest for a few minutes (ideally 24 hours) in the refrigerator and beat with a whisk.
RECOMMENDED DOSE:
80-100 g/kg.
