Soy protein is a concentrated protein obtained from soybeans, which has emulsifying, foaming, and thickening properties. It is used as an ingredient in various culinary and food applications to improve the texture, stability, and emulsifying properties of products.
USE:
It is recommended to mix the cold mixture with the base liquid, stirring vigorously to ensure a homogeneous dispersion of the protein. After mixing, the preparation should rest in the refrigerator for a few minutes, ideally 24 hours, to allow the protein to hydrate properly and develop its emulsifying and foaming potential. After the resting time, the mixture can be beaten with a whisk to obtain a foamy texture and improve the desired consistency.
APPLICATIONS:
Ideal for preparing desserts, mousses, whipped cream, and other products that require a smooth and airy texture.
DOSE:
80-100 g/kg.
