DESCRIPTION
SUCRÖ – SUCROSESTER POWDER
Sucroester powder obtained from sugar (sucrose) and fatty acids.
It can be used to emulsify oils with aqueous products, but it is normally used as a foaming agent for the production of "airs," including in alcoholic products.
This ingredient has many applications in the kitchen.
On the one hand, it can be used as an emulsifier to combine oils with aqueous products, obtaining a homogeneous and stable mixture.
On the other hand, its most common use is as a foaming agent, allowing the creation of "air" in a wide variety of products, even those containing acidic or alcoholic ingredients.
Sucrö is especially effective at creating foams and light textures in culinary preparations.
Its ability to retain and stabilize air during the beating or mixing process is what allows you to achieve those fluffy textures.
Furthermore, its versatility allows it to be used with a wide range of ingredients, providing flexibility in creating "airs" in different recipes and preparations.
HOW TO USE:
Incorporate directly into liquid products.
The emulsifier should remain on the surface of the liquid.
USUAL DOSAGE:
3–5 g/kg for foaming aqueous liquids.
7–8 g/kg for foaming alcoholic products and
12–15 g/kg for foaming oil emulsions in aqueous media.
