DESCRIPTION
THERMOGËL – HEAT RESISTANT GEL
Heat-resistant powder gelling agent.
A mixture of sodium alginate with calcium salts to form the gelled product, but with retarding salts that allow for slow gelation.
The resulting gel is thermally resistant, withstanding oven and griddle temperatures.
It can also be used as a binder and "glue" for amalgamated cooking products, such as veggie burgers.
Ingredients:
Gelling agent: sodium alginate (E-401), stabilizers: E-516, E-450iii.
May contain milk.
HOW TO USE:
Sprinkle onto wet products or add to liquid with vigorous stirring.
Let it gel in the refrigerator for 20 minutes to 24 hours.
DOSAGE:
10–15 g/kg.
Product intended for food use.
Store in a cool, dry place.
