DESCRIPTION
XANTHAN – XANTHAN GUM POWDER
Highly recommended for thickening sauces, creams, and purées, both hot and cold.
Fiber-type carbohydrate obtained by bacterial fermentation with Xanthomonas campestris .
The resulting product is a gum with high thickening power.
Highly suitable for thickening cold drinks.
The resulting texture is very elastic and easy to swallow.
Also very suitable for cold-thickened products, emulsion stabilization, gas retention and suspending effect (solids suspended in liquids).
Extremely efficient: one 600g package is enough to thicken approximately 150 liters of juice.

Soluble in both hot and cold environments, maintaining its thickening power even after the application of heat.

It withstands freezing and thawing processes well.

Shake slowly and allow to hydrate naturally. You can speed it up with vigorous shaking, but this can incorporate air and hinder thickening.
